Feeding the Tiger Family on Thanksgiving

When you spend so much of your time working and interacting with your co-workers, the idea that you may ,at some point, enjoy a Thanksgiving dinner with them does not seem too far fetched. But before you accept that invitation, you may want to catch a glimpse of what might make it to your dinner plate. LSU’s Performance Nutrition team asked around for favorite Thanksgiving recipes and this is what they found!

Cornish Game Hens Stuffed with Wild Rice

She says, “the Thanksgiving struggle was real growing up”…from cutting the turkey and separating the dark meat from the white to leaving the skin on or taking it off, it was the part of the evening that created some tension. At some point her mom decided, “To each his/her own- it is Cornish Game Hens from this point forward!” From then on, her guests each enjoyed the deliciousness that was Cornish game hens stuffed with wild rice. No more fighting for the wishbone in her house…every man, woman, and child each gets their own perfect bird!

My grandmother and my mother always baked their hams in a brown paper bag.  It would cook slow and low overnight so we would wake up in the morning to a home smelling like baked ham! As far as good memories go, this was best part about the holidays for us growing up! They would also make homemade biscuits and use the drippings to make gravy.  Yummy!

Well this recipe is NOT healthy at all- but who really cares about that on Thanksgiving…am I right? This is a recipe that Fran’s mother always made. “It is a family favorite that has turned into a team favorite.” Many volleyball alumni send Fran texts around this time of year and say they wish they could come eat some of her famous green bean casserole for Thanksgiving. For those of you who know Fran, there is always an open invitation!

“For every major holiday like Thanksgiving, Christmas, and Easter, we would go over to my aunt’s house. My aunt and uncle moved a few times throughout my childhood and whenever we would come over for the holidays, it was sometimes a different house than the previous year. But the food my aunt cooked remained the same- especially the Creamy n’ Dreamy Chicken Broccoli! She would always make it for every holiday and nothing about it changed, even if she made it in a ‘new house’!”
